What to look at when engine is out?

As you all know, the engine is currently out of my '97 XJ. I pulled it out to clean it up and paint it.
While it's out, I plan to pull the cylinder head, clean the piston crowns, replace the head gasket and freshen up the top end (polish the valves and replace the valve seals). Draco recommended checking the starter gear, which I'll do.
What else should I look at or do to it while its out?
