New Rider and Mirrors

I've been riding all of less than a week. Did the MSF course thing last weekend. Some dirtbikes and quads in my past but not much.
That said, I'm having trouble figuring out what to do with my mirrors.
I assume these are stock. In my neutral riding position I see my left and right elbows. I angled them so I can see back in the lanes next to me, and if I am in the Left position in a lane, with a twitch of my head I can see the car behind me (usually)
Am I getting it right? Or...?
